Lemon Poppyseed Muffins Recipe

I made these Lemon Poppyseed Muffins because my husband and his dad can’t get enough of them. 🍋 Honestly, I’m starting to think they only like me when I’m baking.🤷🏻‍♀️ Here’s the recipe so you can win over your family too:

Lemon Poppyseed Muffins:

1 2/3 cups all-purpose flour

1 cup granulated sugar

1 1/2 tsp baking powder

1/8 tsp baking soda

2 Tbsp poppy seeds

1/2 cup salted butter, melted

1/4 cup whole milk or milk of choice

3 large eggs

1/4 cup + 2 Tbsp Greek yogurt

2 Tbsp lemon juice

1 tsp vanilla extract

Instructions:

-Preheat your oven to 350°F.

-In a bowl, whisk together the flour, sugar, baking powder, baking soda, and poppy seeds.

-Add the eggs, milk, melted butter, Greek yogurt, vanilla, and lemon juice until smooth.

-Stir until combined.

-Divide the batter evenly into a greased muffin tin, filling each cup about 3/4 full.

-Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let the muffins cool completely.

Vanilla Glaze:

-1 cup powdered sugar

-2–3 Tbsp whole milk or half & half

-1/2 tsp vanilla extract

-Whisk all ingredients together until smooth. Once the muffins are semi cool, dip the tops into the glaze, allowing the excess to drip off before setting them on a rack to dry.
