Ingredients
• Olive oil
• 2 large white onions (sliced)
• 4 garlic cloves (minced)
• Handful of mushrooms (sliced)
• Few cups vegetable stock
• Handful fresh parsley (chopped)
• 1/4 cup nutritional yeast
• 150ml cream (soy, cashew, or your fave)
• 1 jar (or 2 cans) butter beans
• Salt + pepper to taste
• Optional garnish: parsley, crispy onions, olive oil, chili flakes, extra cream
Method
1️⃣ Slowly cook onions in olive oil until golden and caramelized.
2️⃣ Add garlic + mushrooms, sauté a few minutes.
3️⃣ Stir in stock, parsley, nutritional yeast, and butter beans. Simmer to reduce.
4️⃣ Season with salt + pepper, then stir in cream.
5️⃣ Garnish with parsley, chili flakes, olive oil, and serve with bread.
