30-Min Caldo de albóndigas dinner shortcut
Not your abuela’s caldo… but still hits like a hug.

Serves: 4–6

Ingredients:
• 8 oz bag frozen meatballs (beef or turkey)
• 4 roma tomatoes
• 1/2 onion
• 1 garlic clove
• 1 tbsp oil
• 4 & 1/2 cups beef broth
• 2 med potatoes, peeled and diced
• 2 carrots, peeled and sliced
• 6 frozen mini corn cobs
• ~ 1 tsp salt, to taste
• Cilantro + lime, for garnish

Instructions:
1. Blend the base:
Blend tomatoes, onion, and garlic with a splash of water until smooth.
2. Cook the sauce:
Heat oil in a large pot. Pour in the blended mixture and simmer for 5 minutes to deepen the flavor.
3. Add broth + meatballs:
Pour in the broth and bring to a boil. Carefully drop in frozen meatballs. Simmer 10 minutes.
4. Add veggies:
Toss in potatoes and carrots. Simmer 5 minutes.
5. Add corn:
Drop in frozen corn and simmer another 10 minutes until all veggies are fork-tender. (I added about 1 tsp salt & 1 tsp chicken bouillon at the end to taste)
6. Garnish + serve:
Top with fresh cilantro and a squeeze of lime.
Optional: serve with rice or warm tortillas.
