Fluffy Freezer Friendly Pancake Recipe 👇

I always end up with a mountain of pancakes — not because I’m extra, but because I don’t want to waste the batter. Here’s how I stretch one breakfast into a week of cozy wins.

Save this for your next slow morning stack!

This is my tried and true Fluffy Freezer-Friendly Pancake recipe! ⬇️

Ingredients:

• 2 cups all-purpose flour

• 2 tbsp brown sugar (adjust to your sweet tooth)

• 4 tsp baking powder

• ½ tsp baking soda

• ¼ tsp salt

• 1¾ cups milk (add more if needed for smoother batter)

• 2 large eggs

• 2 tbsp melted butter or oil

• 1 tsp vanilla extract

Instructions:

1. Whisk the wet stuff.

In a large bowl, stir together milk, eggs, melted butter (or oil), and vanilla until smooth.

2. Mix the dry stuff.

In a separate bowl, combine flour, sugar, baking powder, baking soda, and salt.

3. Make the magic happen.

Pour the dry mix into the wet mix and gently stir until just combined. Don’t overmix—lumps are totally fine!

4. Cook ‘em golden.

Heat a non-stick pan or griddle over medium heat. Scoop out the batter and cook for about 2–3 minutes on each side until golden and fluffy.

5. Serve hot or stash for later.

Enjoy fresh—or let them cool and freeze in stacks for future cozy mornings.

Mom Hack:

Lay pancakes flat between wax paper and seal in a freezer bag. Label with the date. They reheat like a dream in the microwave or toaster!

... Read moreIf you struggle with busy mornings like I do, making pancakes ahead of time and freezing them is a total game changer. After cooking, I separate each pancake with wax paper before stacking and sealing them in freezer bags. This simple mom hack keeps each pancake fresh and prevents sticking, making reheating a breeze either in the microwave or toaster. It’s a great way to reduce food waste since you don’t have to use the whole batter at once or throw away extras. For added variety, I sometimes turn leftover pancakes into fun breakfast snacks like Nutella pancake sandwiches or pancake tacos — yes, that’s a thing! These ideas add excitement to the regular pancake routine and keep the whole family happy. Plus, you can easily double or triple the recipe when you want to prep for the week ahead, saving time on busy mornings. I also pay attention to the batter consistency — if it feels too thick, I add a bit more milk for smoother pancakes that cook up fluffy and golden. Don’t worry about lumps; gentle stirring keeps the texture light and tender. With this approach, pancakes have become my go-to meal prep for cozy breakfasts that don’t sacrifice taste or convenience.
