🌮 Sweet Potato & Black Bean Tacos

Ingredients

2 sweet potatoes, peeled & diced ( when I am in a hurry I buy canned sweet potatoes and roast them just long enough to heat and crisp some)

1 (15 oz) can black beans, drained & rinsed

½ red onion, finely chopped

2 cloves garlic, minced

2 tbsp olive oil

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika

Salt & pepper, to taste

Corn tortillas

Instructions

Preheat oven to 400°F.

Toss sweet potatoes with 1 tbsp olive oil, cumin, chili powder, smoked paprika, and garlic.

Spread on a baking sheet and roast for 20–25 minutes, stirring halfway through.

Heat remaining 1 tbsp olive oil in a skillet. Sauté onion until soft, then stir in black beans. Cook 3–5 minutes and season with salt & pepper.

Warm the corn tortillas.

Fill tortillas with the roasted sweet potatoes and black bean mixture.
