BBQ Chicken Sweet Potato

Ingredients List

* ½ teaspoon smoked paprika

* ½ red onion, sliced

* 1 cup corn kernels

* 1 cup shredded cheddar or mozzarella cheese

* Fresh green onions, sliced

Substitutions

* Use rotisserie chicken for convenience

* Swap corn with black beans

How to Make It

1. Heat olive oil in a large skillet over medium heat.

2. Add diced sweet potatoes and season with salt and black pepper.

3. Cook for 10–12 minutes, stirring occasionally, until tender and lightly browned.
