This low carb chicken parm casserole is a fantastic dish for those looking to maintain a healthy diet without sacrificing comfort food favorites. I’ve tried many variations of chicken parmesan, but swapping out traditional pasta for cauliflower rice really cuts down the carbs and adds a subtle, buttery flavor that complements the savory tomato and cheese well. Using cauliflower rice not only lowers the carbohydrate content dramatically but also increases the vegetable intake, which is always a plus. I recommend using fresh mozzarella rather than pre-shredded because it melts more smoothly, creating a rich, gooey topping that perfectly binds the casserole. The blend of parmesan cheese adds a sharp, nutty taste that elevates the dish’s overall flavor profile. One tip from my experience: cooking the cauliflower rice in a cast iron skillet with olive oil enhances its texture and prevents wateriness, which can sometimes be a problem with cauliflower rice dishes. Adding cream cheese and garlic salt creates a creamy base that mimics the traditional sauce texture but keeps it lighter. This recipe is also very versatile. You can easily add vegetables like sautéed spinach or mushrooms for extra nutrients and flavor, or use different Italian seasonings to suit your personal taste. The quick broil step at the end is crucial to get that perfect, slightly browned cheese crust that everyone loves. Whether you're managing your carb intake or simply want a delicious, easy dinner, this chicken parm casserole is worth trying. It’s a satisfying meal that can be prepared in under 30 minutes, making it perfect for busy weeknights. I personally love garnishing it with fresh basil as it adds a refreshing aroma and visual appeal. Give this recipe a go and enjoy a guilt-free twist on a classic favorite!
