One pot comfort meal
Ingredients:
1 lb ground beef (do not drain)
4 beef or pork sausages, sliced
2 cups white rice (uncooked)
1 (12–16 oz) bag frozen corn
1 (10.5 oz) can cream of celery soup
½ cup BBQ sauce
4 tbsp butter
Salt, garlic powder, and onion powder to taste
4 cups water or broth
Instructions:
1. In a large pot over medium heat, cook the ground beef until fully browned. Do not drain the grease.
2. Add the sliced sausages and cook for 2–3 minutes, until slightly browned.
3. Stir in the BBQ sauce, butter, and season to taste with salt, garlic powder, and onion powder.
4. Add the uncooked rice and the can of cream of celery soup. Stir well to coat the rice in all the flavors.
5. Pour in 4 cups of water or broth. Bring the mixture to a boil.
6. Once boiling, reduce the heat to low, cover, and simmer for 15–20 minutes or until the rice is fully cooked and liquid is absorbed.
7. Once the rice is done, stir in the frozen corn. Cover and let sit for 5 minutes so the corn warms through without overcooking.
8. Fluff and serve hot.

It is an ideal option for busy weeknights, budget-conscious families, or anyone seeking a comforting homemade meal with minimal effort. Variations to tailor this recipe include substituting ground turkey or chicken to reduce fat, using brown rice for added fiber, or incorporating additional vegetables such as diced bell peppers or mushrooms for more nutrients. For a vegetarian adaptation, plant-based sausage alternatives and vegetable broth can be used.
