OLIVE GARDEN BROWNIE LASAGNA
* 2 boxes fudge brownie mix (18–19 oz each)
* Eggs, oil, and water (per package directions)
* +1 extra egg (total across both mixes, for sturdier layers)
* 16 oz cream cheese, softened
* ½ cup unsalted butter, softened
* 3 cups powdered sugar
* 1 ½ tsp vanilla extract
* 1 ½ cups heavy whipping cream, whipped to stiff peaks
Chocolate Ganache
* 1 ½ cups semi-sweet chocolate chips
* ¾ cup heavy cream
* Garnish (add at serving)
* 1 cup shaved chocolate curls or mini chocolate chips
* Extra whipped cream
* Bake the Brownies: Preheat oven according to brownie mix directions. Prepare 2 boxes of fudge brownie mix, adding 1 extra egg total for sturdier layers. Divide batter between two greased 9x13 pans. Bake until set, then cool completely. Remove from pans and slice each pan in half horizontally to create 4 thin layers. Wrap layers in parchment and freeze 20–30 minutes to firm.
* Make the Cream Filling: Beat softened cream cheese and butter until smooth. Add powdered sugar and vanilla; mix until fluffy. In a separate bowl, whip heavy cream to stiff peaks. Fold whipped cream gently into cream cheese mixture until mousse-like. Cover and refrigerate until assembly.
* Prepare the Ganache: Heat heavy cream just to a simmer. Pour over chocolate chips in a bowl, let sit 2 minutes, then stir until smooth and glossy. Cool to room temperature until pourable but not hot. Assemble on a Platter: Place parchment strips across your serving platter with ends hanging over the sides. Lay down the first brownie layer. Spread ¼ of the cream filling evenly, then drizzle lightly with ganache. Repeat layering (brownie → cream → ganache) until all 4 brownie layers are stacked. Finish with cream filling on top and spread remaining ganache smoothly, letting some drip down the sides.
* Chill Overnight: Loosely tent with plastic wrap or foil, using toothpicks to keep wrap off the top. Refrigerate at least 8 hours or overnight so the layers firm and slice cleanly. Finish & Serve: Remove tenting carefully and slide parchment strips out for clean platter edges. Garnish with shaved chocolate curls or mini chips, and add whipped cream if desired. Slice with a hot serrated knife, wiping between cuts. Serve chilled on individual plates with an extra drizzle of ganache for the true Olive Garden presentation
Making Olive Garden’s Brownie Lasagna at home has been a real game-changer for me, especially because it’s surprisingly simple yet incredibly indulgent. One tip I learned along the way is that adding an extra egg to the brownie mix really makes the layers sturdier and easier to handle during assembly, which is crucial since the recipe calls for slicing the brownies into thin sheets. When I first attempted this dessert, the chocolate ganache was my favorite part to prepare. Heating the heavy cream just to simmer but not boiling it ensures your chocolate chips melt smoothly, resulting in a glossy finish that looks just like the restaurant version. A trick I use is to let the ganache cool at room temperature until it’s pourable but not hot, so it sets nicely on the layers without melting the cream filling. Speaking of the cream filling, whipping the heavy cream to stiff peaks before folding it in gives the filling a mousse-like texture that balances perfectly with the fudgy brownie layers. Make sure your cream cheese and butter are softened to room temperature to avoid lumps and to mix it to a light and fluffy consistency. Also, I highly recommend chilling the assembled lasagna overnight. This resting period allows all the flavors to meld together and makes slicing so much cleaner and easier. Using parchment strips under the brownies when assembling is a neat hack for getting perfect edges on your serving platter. For garnish, I love using a mix of chocolate curls and mini chips to add a professional touch. Extra whipped cream on the side never hurts either! This dessert is perfect not only for special occasions like holidays and potlucks but also as a delightful treat for an ordinary day.
