Caldo de Picadillo ❤️
You’ll need:
- 1lb ground beef
- 1 canned corn (drained)
- 1-2 carrots chopped
- 1 russet potato diced into small cubes
- 1 calabaza squash or zucchini
- 1/3 cup of chopped cilantro
- 6 cups of water
- 1 tsp of Garlic powder, salt & pepper
- 1 tbsp of beef and tomato bouillon
- 1 lime
Cook ground beef and season with garlic powder, salt and pepper. Drain the grease.
Add the potatoes and carrots to the pot, stir, then add the water. Add the beef and tomato bouillon then mix. Bring it to a boil for 5 min.
Add the cilantro, calabaza squash, and corn. Mix and let it boil on medium heat with the cover on for 15 min.
Check the potatoes to make sure they’re soft and taste it to see if it needs more seasoning. Squeeze lime, mix and enjoy!
