Ingredients (2–3 sandwiches)

1 cup cooked crawfish tails (peeled, drained)

4–6 slices bread

4 tbsp butter

2 cloves garlic (minced)

¼ cup chopped parsley

1 tbsp Cajun seasoning

1/4 tsp crushed red pepper

Salt & pepper to taste

1 cup shredded cheese (mix of mozzarella + cheddar or pepper jack)

2 tbsp chopped green onions (optional)

Instructions:

1. Make the crawfish filling

Heat butter in a pan over medium heat

Sauté garlic until soft

Add crawfish tails, Cajun seasoning, crushed red pepper, salt, and pepper

Cook 2–3 minutes (don’t overcook)

Remove from heat

2. Build the sandwich

Butter one side of each bread slice

On the inside, layer:

Shredded cheese

Crawfish mixture

More cheese (for that melt + pull 😍)

3. Grill it
