Couscous is a versatile and nutritious grain that forms an excellent base for a hearty veggie salad. The addition of roasted garlic couscous enhances the flavor with a subtle savory depth, complementing the fresh vegetables such as carrots, broccoli, cherry tomatoes, cucumber, zucchini, and green onions. Incorporating jarred Kalamata and black olives adds a salty richness and a Mediterranean twist, while artichoke hearts contribute a tender texture and a mild, tangy flavor. Topped with feta cheese crumbles, the salad gains a creamy and slightly salty finish. Using Olive Garden Italian Dressing provides a convenient and well-balanced blend of herbs, vinegar, and oil, bringing together the flavors in a refreshing and zesty way. This dressing keeps the salad light while enhancing its overall taste, making it suitable for warm or chilled servings—ideal for summer meals or as a nutritious side dish. This couscous veggie salad not only offers a colorful and appetizing presentation but also delivers multiple health benefits. Couscous is a good source of plant-based protein and fiber, supporting digestion and sustained energy levels. Fresh vegetables provide essential vitamins, antioxidants, and minerals that contribute to overall wellness. Kalamata olives and olive oil-based dressings offer healthy monounsaturated fats, which are beneficial for heart health. To customize the salad, consider adding protein options like grilled chicken, chickpeas, or tofu for a more balanced meal. Fresh herbs like parsley, basil, or mint can further brighten the flavor profile. For variations, try swapping the Italian dressing with a lemon vinaigrette or tahini sauce. Overall, this roasted garlic couscous veggie salad is a quick, nutritious, and delicious recipe that suits various dietary preferences and makes a perfect dish for picnics, lunches, or light dinners.
