Let’s make it simple!
I know it is SO intimidating. Dinner has been coming from a box, bag, or a can for so long… it feels impossible. But there are some things you can do to make your week easier! (I will never pretend this approach will work for everyone - we all truly DO NOT have the same 24 hours. But the week is BUSY, so do this on your day off or before bed one night & I promise your future self will thank you!)
1. Wash all that produce when you get home from the store. Throw it in a giant bowl (or a CLEAN sink) with some hot water & vinegar, let it soak 10 minutes, and throw it on some towels lined with paper towel to dry. You’ll feel lazy, you won’t want to do it. But I promise you’ll feel so much better if you get it done now.
2. The things you’re going to use in the next 3-5 days - go ahead & prep it now! Chop your veggies, mince your garlic, prep some fruit. Throw it in some airtight containers once they’re completely dry!
3. Choose SIMPLE recipes. You don’t have an hour to make dinner every night. Choose recipes that have a short cook time, 20 minutes or less. And if your veggies are already prepped, that’s even less time!
4. PLAN AHEAD. Plan your week ahead of time! Know exactly what you’re eating for dinner every single day this week! This will save you money at the store (and eating out at restaurants)!
