Ingredients:
▪️1 lb chicken breast
▪️4 tsp ranch seasoning
▪️3 tsp au jus mix
▪️2 tbsp butter
▪️6-9 pepperoncini peppers (cut up)
▪️splash of pepperoncini juice
MASHED POTATOES
▪️2 servings instant mashed potatoes
▪️1 bag Birds Eye riced cauliflower
Directions:
▪️Add chicken, au jus, ranch seasoning, butter, pepperoncini and the juice to a slow cooker. Slow cook on low for 6 hours.
▪️Shred chicken when it’s cooked and add back to slow cooker to mix in all the juices.
▪️Prepare mashed potatoes according to box instructions and mix in the microwaved riced cauliflower.
▪️Serve chicken over the mashed potato/cauliflower mixture. Enjoy!
