Most restaurants don’t fail at the end.

Everyone thinks restaurants fail because of the obvious things.

Location.

Rent.

Staffing.

But that’s not where it actually breaks.

It breaks at the beginning.

Before the lease.

Before the buildout.

Before a single guest ever walks in.

Because everything is built on assumptions.

What people think will work.

What people hope will sell.

No real signal.

The problem isn’t risk.

Risk is part of it.

The problem is guessing.

There’s a difference between taking a risk

and building something without feedback.

Lately I’ve been thinking more about what it would look like to flip that.

To test things earlier.

In smaller rooms.

With real people.

Before anything becomes permanent.

Feels like a better way to build.

Curious if others see it the same way.
