... Read moreHey everyone! I'm so thrilled to share my latest budget hack: an Aldi meal plan for two people that lasted a full two weeks, all while keeping the grocery bill under $100! Seriously, it felt like a mission, but I managed to put together some super tasty and satisfying meals. If you're looking to save money on groceries without compromising on flavor or variety, this is for you. Here’s how I made it happen, using mostly items from my recent Aldi haul. My strategy was all about maximizing ingredients and thinking ahead. Aldi makes it easy with their fantastic prices on staples and fresh produce. For drinks, I stocked up on some refreshing sparkling strawberry kiwi flavored water and, of course, some mocha iced coffee for those morning boosts. These little treats make a budget feel less restrictive! Week 1 Meal Ideas: Burger & Fry Night: We grabbed some ground beef patties and hamburger buns, paired with thick-cut french fries. So easy and classic! I seasoned the patties generously with a dash of sea salt and peppercorn. One pack of ground beef can stretch for a few meals if you're smart. Hot Dogs with Sides: Another quick win! Beef franks and hot dog buns are perfect for a casual evening. I jazzed it up with cheddar broccoli rice side dishes. These sides are surprisingly filling and delicious. Spaghetti & Meat Sauce: This is a budget staple! I used a box of spaghetti, four jars of pasta sauce (Aldi's sauces are great!), and the rest of the ground beef. Add a side of five-cheese garlic toast for a complete, comforting meal. We had this twice, maybe even three times, with leftovers for lunch. Week 2 Meal Ideas: Quick Skillet Dinners: Aldi's skillet meals are lifesavers! I picked up both garlic chicken and alfredo chicken varieties. They're packed with pasta and vegetables, making for a super quick and satisfying dinner when you’re short on time. I love how these save on prep. Chicken Fajita Fiesta: Using the pre-cooked chicken breast strips for fajitas makes this meal a breeze. Just heat, add your favorite toppings, and serve with some sweet corn on the side. We made enough for two nights, turning leftovers into lunchtime wraps. Classic Chicken & Veggies: Thin-sliced chicken breasts are versatile. I pan-fried them and served them with cut green beans and some corn muffin mix I baked fresh. Hearty and wholesome! The mixed vegetables were also a great addition to round out any meal. Easy Salmon Dinner: I found a packaged Atlantic salmon fillet, which felt like a luxury on a budget! Pairing it with some steamed mixed vegetables made for a healthy and delicious dinner. You can even roast it with a little sea salt and peppercorn for maximum flavor. Chicken Wing Treat: Who doesn't love chicken wings? A bag of chicken wing sections can be air-fried or baked for a fun, casual meal, especially if you have a great sauce on hand. A little treat to keep things interesting! Budget Tips & Tricks: Meal Prep Basics: I prepped some components on Sunday, like chopping veggies or cooking a big batch of ground beef to use in multiple dishes. This saved time during busy weekdays. Don't Waste Leftovers: Portions for two often mean leftovers. I embraced them! Lunch was often a smaller portion of the previous night's dinner, which kept us from buying expensive takeout. Utilize Spices: Don't underestimate the power of sea salt and peppercorn (or any other spices you have) to elevate simple ingredients. Aldi's spices are usually very affordable too. Check Weekly Ads: Always look at Aldi's weekly specials before you shop to plan your meals around discounted items. This meal plan proves you can eat well, enjoy variety, and stick to a tight budget, thanks to Aldi. Give it a try, and let me know your favorite Aldi budget buys!

Another tip, the frozen veggies they have are way fresher than the canned and still at a pretty close price point, .99 for broccoli and .89 for corn or peas and so on! Also I love these meal ideas but we all collectively really need to stop supporting Tyson! They are a horrible company and they treat animals horribly. Just look it up for yourself, Might taste fine but those poor chickens got treated like total garbage 😭
