Pumpkin Spiced Pancakes 🥞

I’m not a pumpkin spiced fanatic but these pancakes have me & my hubby in a chokehold lol 😍 the key to fluffy pancakes is using buttermilk, separate and beat your egg whites & don’t over mix the batter let it rest!

Ingredients:

• 1 1/2 cups all-purpose flour

• 1 tbsp sugar

• 1 tbsp baking powder

• 1/4 tsp baking soda

• 1 tsp pumpkin pie spice

• 1/2 tsp ground cinnamon

• 1/2 tsp salt

• 1 cup buttermilk (or 3/4 cup milk mixed with 1/4 cup yogurt)

• 1/2 cup pumpkin puree

• 2 large eggs (separate the whites and yolks)

• 2 tbsp melted butter (plus more for greasing the pan)

• 1 tsp vanilla extract

Method:

1. In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.

2. In a separate bowl, whisk together the sugar, egg yolks, buttermilk, pumpkin puree, melted butter, and vanilla extract until well combined.

3. In another bowl, use an electric mixer to beat the egg whites until stiff peaks form. This step will make your pancakes extra fluffy.

4. Pour the dry ingredients into the bowl with the wet ingredients. Stir gently, just until combined (a few lumps are fine).

5. Gently fold the beaten egg whites into the batter. Be careful not to overmix, so you don’t deflate the fluffy texture.

6. Let the batter sit for 5–10 minutes. This resting time allows the leavening agents to create air bubbles, making the pancakes rise better when cooked.

8. Cook & Serve!

Stack your fluffy pumpkin spiced pancakes and drizzle with maple syrup. Sprinkle extra cinnamon on top for that cozy fall touch extra points for powdered sugar!
