Ingredients

• 3–4 boneless, skinless chicken breasts

• 1 teaspoon salt

• ½ teaspoon black pepper

• 1 teaspoon Italian seasoning

• ½ teaspoon garlic powder

• ½ teaspoon onion powder

• ½ teaspoon red pepper flakes (optional, for a little heat)

• 1 cup sun-dried tomatoes, chopped (packed in oil, drained)

• 3–4 cloves garlic, minced

• 1 cup heavy cream

• 1 cup grated Parmesan cheese

• 2 tbsp Corn Starch (Slurry)

• 1 cup fresh spinach, chopped

• 1 box (16 oz) rigatoni pasta, cooked separately

• 2 tablespoons olive oil

• Fresh basil or parsley for garnish

Instructions

1.Prep the Chicken – Season the chicken breasts with salt, pepper, Italian seasoning, garlic powder, onion powder, and red pepper flakes.

2.Layer the Crockpot – Place the seasoned chicken in the slow cooker. Mix and Pour the heavy cream, Parmesan, salt, pepper, corn starch and sun dried tomatoes over your chicken.

3.Cook – Cover and cook on low for 5–6 hours or high for 3–4 hours, until the chicken is tender and easily shreddable.

4.Add Spinach – Stir in chopped spinach and let it cook for another 10–15 minutes until wilted.

5.Serve Over Rigatoni – Cook the rigatoni according to package instructions. Drain and toss it with a bit of olive oil. Serve the creamy Tuscan chicken over the pasta.

6.Garnish & Enjoy – Top with fresh basil or parsley and extra Parmesan cheese.
