Collard Green & Sausage Quiche

I turned my holiday leftovers into a deep-dish collard green and sausage quiche using Just Egg and a vegan pie crust. Here’s the recipe:

Ingredients

• 1 deep-dish vegan pie crust

• 1½ cups leftover collard greens, drained & chopped

• 1 cup plant-based sausage, browned

• Diced onion

• Diced colored bell peppers

• 1 clove garlic, minced

• Just Egg (I used about ⅔ of the mixture)

• ¼–½ cup heavy dairy-free cream

• Black salt, onion powder, garlic powder

• Salt, pepper, crushed red pepper (optional)

• Vegan cheese (optional)

Instructions

Pre-bake the crust at 375°F for 8–10 minutes.

Sauté sausage, onions, peppers, and garlic until browned. Add collards and season with salt, pepper, and crushed red pepper if you like heat.

Whisk Just Egg with heavy cream, seasonings, and vegan cheese if using.

Stir in the collard-sausage mixture.

Cool 15 minutes before slicing.
