CREOLE TOFU SCRAMBLE

All the flavor. Zero eggs.

Ingredients

1 block (14 oz) extra-firm tofu, pressed and crumbled

1 tbsp olive oil

¼ tsp turmeric

¼ tsp black salt (kala namak)

¼ tsp garlic powder

¼ tsp onion powder

Black pepper to taste

1 tbsp nutritional yeast (optional)

Creole Base (Holy Trinity)

2 tbsp diced onion

2 tbsp green bell pepper

2 tbsp celery

1 clove garlic, minced

¼ tsp Creole seasoning (salt-free preferred)

Pinch of thyme

Optional: vegan cheese, green onions, hot sauce, mushrooms, vegan sausage

Instructions

1️⃣ Heat olive oil in a skillet over medium heat.

2️⃣ Add onion, bell pepper, and celery. Sauté 3–4 minutes until soft.

3️⃣ Add garlic, Creole seasoning, and thyme. Cook 30 seconds.

4️⃣ Add crumbled tofu, turmeric, black salt, garlic powder, onion powder, pepper, and nutritional yeast.

5️⃣ Cook 5–7 minutes, stirring occasionally, until heated through and lightly golden.

6️⃣ Finish with green onions and hot sauce.
