Cajun Boudin Arancini (Vegan, Cheese-Stuffed)

Crispy fried rice balls inspired by Louisiana boudin with a melty vegan cheese center.

Ingredients

Boudin Rice Base

2 tbsp olive oil

1 small onion, finely diced

1 green bell pepper, finely diced

1 celery stalk, finely diced

3 cloves garlic, minced

8 oz mushrooms, finely chopped

1½ tsp Cajun seasoning

½ tsp dried thyme

½ tsp white pepper

½ tsp black pepper

1 tsp vegan Worcestershire

1 tsp liquid smoke

2 cups cooked short-grain rice

Salt to taste

Cheese Center

4 oz vegan mozzarella, cut into small cubes

Breading Station

Bowl 1

1½ cups all-purpose flour

Bowl 2

1 cup unsweetened plant milk

4 tbsp Just Egg or chickpea flour

Pinch salt & black pepper

Bowl 3

2½ cups seasoned breadcrumbs

For Frying

Neutral oil

Instructions

1. Heat olive oil in skillet over medium heat.

2. Add onion, bell pepper, and celery. Cook 6 to 8 minutes until soft.

3. Add garlic and cook 30 seconds.

4. Add mushrooms and cook until browned and most moisture is gone.

5. Stir in Cajun seasoning, thyme, white pepper, black pepper, Worcestershire, and liquid smoke.

6. Fold in cooked rice. Taste and adjust salt.

7. Remove from heat and let mixture cool completely.

8. Scoop about 2 tablespoons of mixture, flatten, place vegan mozzarella cube in center, and roll into ball.

9. Repeat and chill 20 to 30 minutes.

10. Roll balls in flour.

11. Dip into plant milk mixture.

12. Roll in breadcrumbs, pressing gently.

13. Heat oil to 350°F.

14. Fry in batches 3 to 4 minutes until golden.

15. Drain on paper towels.
