Cajun Crawfish-Style Stuffed Portobellos (Vegan)
Roasted portobello mushrooms filled with a creamy Cajun “crab” stuffing made from hearts of palm, Trinity vegetables, breadcrumbs, and dulse for that ocean flavor.
Ingredients
4 large portobello mushrooms
2 tbsp olive oil
Salt & black pepper
1 tbsp olive oil
½ onion, finely diced
½ green bell pepper, finely diced
1 celery stalk, diced
3 garlic cloves, minced
1½ cups finely chopped hearts of palm
1 tsp dulse flakes
1 tsp Cajun seasoning
½ tsp thyme
½ tsp black pepper
¼ tsp cayenne
¾ cup breadcrumbs
2 tbsp parsley
2 tbsp green onion
½ cup plant cream or cashew cream
1 tbsp nutritional yeast
1 tsp lemon juice
1 tsp Dijon mustard
Optional
¼ cup vegan parmesan
Instructions
1. Heat oven to 400°F. Brush mushrooms with olive oil, season with salt and pepper, and roast gill-side up for 10–12 minutes.
2. Sauté onion, bell pepper, and celery in olive oil until softened. Add garlic and cook 30 seconds.
3. Stir in hearts of palm, dulse, Cajun seasoning, thyme, black pepper, and cayenne.
4. Add breadcrumbs, parsley, and green onion.
5. Mix plant cream, nutritional yeast, lemon juice, and Dijon. Fold into the stuffing until it holds together like crab stuffing.
6. Fill roasted mushrooms generously. Sprinkle with vegan parmesan if desired.
7. Bake 12–15 minutes until mushrooms are tender and tops are lightly golden.
