Ingredients
2 lbs Yukon gold potatoes
3 tbsp vegan butter
½ cup plant milk
16 oz mixed mushrooms (oyster + cremini)
1 small onion, diced
1 celery stalk, diced
1 small carrot, diced
4 cloves garlic
1½ tsp Old Bay
1 tsp smoked paprika
½ tsp thyme
½ tsp Cajun seasoning
1 cup vegan cream
½ cup vegetable broth
1 tsp Dijon
1 tsp vegan Worcestershire
1 tsp kelp flakes or crushed nori
1 tsp lemon juice
Parsley & paprika for garnish
Instructions
1️ ⃣ Boil potatoes until tender. Mash with butter and plant milk.
2️⃣ Sauté mushrooms in olive oil until browned. Add onion, celery, carrot, and garlic. Cook until softened.
3️⃣ Stir in seasonings. Add vegan cream, broth, Dijon, Worcestershire, kelp, and lemon. Simmer until thick.
4️⃣ Spread filling in a baking dish and top with mashed potatoes.
5️⃣ Bake at 375°F for 20–25 minutes, broil briefly for a golden top.
