Flaky Southern-style biscuits layered with fresh strawberries and lightly sweet whipped cream.

Ingredients
Biscuits
2 cups flour
1 tbsp baking powder
½ tsp salt
2 tbsp sugar
6 tbsp cold vegan butter
¾ cup plant milk
1 tsp vanilla

Strawberries
2 cups sliced strawberries
3 tbsp sugar
½ tsp lemon juice

Whipped cream
1 cup cold coconut cream or vegan whipping cream
2 tbsp powdered sugar
1 tsp vanilla

Instructions
1ļøā£ Toss strawberries with sugar and lemon juice. Let sit 15ā20 minutes until juicy.
2ļøā£ In a bowl, whisk flour, baking powder, salt, and sugar.
3ļøā£ Cut in cold butter until crumbly.
4ļøā£ Stir in plant milk and vanilla just until dough forms.
5ļøā£ Pat dough into a thick rectangle and cut biscuits.
6ļøā£ Bake at 425°F for 14ā16 minutes until golden.
7ļøā£ Whip cream with powdered sugar and vanilla until fluffy.
