Ingredients

White beans

2 cups cooked white beans (navy or great northern)

1 tbsp oil

½ cup diced onion

½ cup diced bell pepper

¼ cup diced celery

3 cloves garlic, minced

1½ cups vegetable broth

1 tsp dried thyme

1 bay leaf

1 tsp Cajun seasoning

¼ tsp white pepper

Salt and black pepper to taste

Optional depth booster

pinch smoked paprika or mushroom powder

Charred okra

2 cups sliced fresh okra

1 tbsp oil

Pinch salt

Optional garnish

sliced green onions

Instructions

1. Heat oil in a skillet over medium-high heat.

2. Add sliced okra and cook until browned and lightly crisp. Season with a pinch of salt. Set aside.

3. In a pot, sauté onion, bell pepper, and celery until softened.

4. Add garlic and cook 30 seconds.

5. Stir in vegetable broth, thyme, bay leaf, Cajun seasoning, white pepper, salt, and black pepper.

6. Simmer 10 minutes to develop flavor.

7. Add white beans and cook another 15–20 minutes until creamy and slightly thickened.

8. Spoon beans into bowls and finish with charred okra just before serving.

Top with sliced green onions if desired.
