Crispy Cornmeal Eggplant with Creole Red Gravy
Golden cornmeal-crusted eggplant topped with a rich Creole red gravy simmered with onion, celery, bell pepper, and garlic. A classic Southern comfort plate made plant-based.
Serves 3–4
Ingredients
Eggplant
1 large eggplant, sliced into ½-inch rounds
1 cup unsweetened plant milk
1 tbsp cornstarch
¾ cup cornmeal
¼ cup flour
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp cayenne
¼ tsp black pepper
Oil for shallow frying

Creole red gravy
2 tbsp olive oil
½ cup diced onion
½ cup diced celery
½ cup diced bell pepper
3 cloves garlic, minced
2 tbsp flour
1½ cups crushed tomatoes
1 cup vegetable broth
1 tsp Creole seasoning
½ tsp dried thyme
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
2 tbsp sliced green onions
1 tbsp chopped parsley

Instructions
1. Whisk plant milk and cornstarch in a shallow bowl.
2. In a separate bowl, combine cornmeal, flour, paprika, garlic powder, onion powder, salt, cayenne, and black pepper.
3. Dip eggplant slices into the milk mixture, then dredge in the cornmeal coating.
4. Heat about ¼ inch oil in a skillet over medium heat and fry eggplant until golden and crisp on both sides. Transfer to a rack or paper towel-lined plate.
5. In another skillet, heat olive oil and sauté onion, celery, and bell pepper until softened.
6. Add garlic and cook 30 seconds.
7. Stir in flour and cook 1–2 minutes to form a light roux.
8. Add crushed tomatoes and vegetable broth, whisking until smooth.
9. Stir in Creole seasoning, thyme, smoked paprika, salt, and black pepper. Simmer until slightly thickened.
10. Spoon gravy over crispy eggplant and finish with green onions and parsley.
