30 minute salmon meal prep

Chipotle Blackened Salmon with Broccoli & Kaizen Rice

Ingredients

For the Salmon:

2 salmon fillets (about 5–6 oz each, skin on or off)

1 tbsp olive oil

1 tsp chipotle chili powder

½ tsp smoked paprika

½ tsp garlic powder

½ tsp onion powder

¼ tsp ground cumin

Salt & pepper to taste

Optional: squeeze of lime for finishing

For the Broccoli:

2 cups broccoli florets

1 tbsp olive oil or avocado oil

Salt & pepper

Optional: pinch of garlic powder or red pepper flakes

For the Kaizen Rice:

1 bag or 1½ cups cooked Kaizen rice (high-protein, low-carb rice alternative)

1 tsp olive oil or butter

Salt to taste

Optional: chopped fresh herbs (parsley or cilantro), garlic, or lemon zest for flavor

Instructions

1. Prep the Seasoning

In a small bowl, mix the chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper.

2. Season the Salmon

Pat salmon fillets dry with a paper towel. Rub both sides with olive oil, then coat evenly with the chipotle seasoning blend. Let it sit at room temperature while you prep the sides.

3. Roast or Steam the Broccoli

Option 1 (Roasted):

Preheat oven to 425°F.

Toss broccoli florets with oil, salt, and any optional seasonings.

Spread on a baking sheet and roast for 15–18 minutes until crispy and slightly browned.

Option 2 (Steamed):

Add broccoli to a steamer basket over boiling water.

Cover and steam for 5–6 minutes until bright green and tender.

4. Cook the Salmon

Heat a non-stick skillet or cast-iron pan over medium-high heat.

Add a bit of oil and place salmon skin-side down (if it has skin).

Cook for 3–4 minutes per side (depending on thickness), until a blackened crust forms and the fish flakes easily with a fork.

Optional: Finish with a squeeze of lime or lemon juice.

5. Prepare Kaizen Rice

Heat a pan over medium heat with a splash of olive oil or butter.

Add cooked Kaizen rice, season with salt, and warm through for 2–3 minutes.
