Ingredients
For the Chicken:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
Salt and pepper to taste
1 teaspoon Italian seasoning
2 cloves garlic, minced
For the Pasta:
8 ounces pasta (penne or spaghetti)
2 tablespoons olive oil
1 pint cherry tomatoes, halved
3 cloves garlic, minced
1/4 cup fresh basil, chopped
1/4 cup grated Parmesan cheese
Salt and pepper to taste
For the Bruschetta Topping:
1 cup diced tomatoes
1/4 cup fresh basil, chopped
2 tablespoons balsamic vinegar
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
Instructions
Cook the Chicken:
Season chicken breasts with salt, pepper, Italian seasoning, and minced garlic.
Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for 5-7 minutes per side, or until cooked through and no longer pink in the middle.
Remove chicken from skillet, let it rest for 5 minutes, and then slice into strips.
Prepare the Bruschetta Topping:
In a medium bowl, combine diced tomatoes, fresh basil, balsamic vinegar, olive oil, salt, and pepper. Set aside to marinate.
Cook the Pasta:
Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
Make the Pasta Sauce:
In the same skillet used for the chicken, add 2 tablespoons of olive oil and heat over medium. Add cherry tomatoes and garlic, cooking until the tomatoes begin to soften, about 3-4 minutes.
Combine Pasta and Sauce:
Add the cooked pasta to the skillet with the tomatoes and garlic. Toss to combine and cook for another 2 minutes to heat through. Stir in the chopped basil and Parmesan cheese. Season with salt and pepper to taste.
Assemble the Dish:
Place a portion of pasta on each plate. Top with slices of chicken and a generous spoonful of the bruschetta topping.
Serve:
Serve immediately, garnished with extra Parmesan cheese and basil if desired.
