Take 1/2 lb of baby dutch yellow potatoes or small mini new potatoes and boil them until fork tender.

Drain off water and let them cool for 5 minutes. Spray your muffin pan with non-stick spray and place one potato per muffin holder.

Then get a glass or something small enough to smash potato completely.

Melt 3 Tbsp of butter with 1/3 cup heavy cream and mix together and pour that on top of each potato - about a TSP!!

Then top with cheddar cheese and bacon! Bake at 350° for 18-20 minutes and I topped them with sour cream, red onions, scallions and salt.
