Ingredients (serves 4):

• 4 boneless, skinless chicken breasts

• 2 tbsp olive oil

• 2 tsp Italian seasoning

• 2 cups cherry tomatoes

• 8 oz fresh mozzarella (sliced into rounds)

• Fresh basil leaves (a big handful)

• Pesto sauce (optional for taste - not needed!)

• Salt + pepper, to taste

• Balsamic glaze, for drizzling

Instructions:

1. Preheat oven to 400°F (200°C).

2. Place chicken breasts on a sheet pan, rub with olive oil, Italian seasoning, salt, and pepper.

3. Roast for 15 minutes.

4. Remove pan, scatter cherry tomatoes around the chicken.

5. Return to the oven for another 10–12 minutes until chicken is nearly done. Cherry tomatoes will start to burst and juices will come out!

6. Add pesto on top of chicken (optional)mozzarella slices on top of each chicken breast, then bake 3–5 more minutes until melted.

7. Remove from oven, use a fork to help lightly smash the rest of the tomatoes that haven’t let their juices out, scatter fresh basil over everything, and drizzle with balsamic glaze.
