Ingredients (Serves 2โ€“3)

โ€ข 2 cups leftover cooked white rice

โ€ข 1โ€“2 tsp oil + 1 tsp butter

โ€ข 1 small onion, chopped

โ€ข 1โ€“2 carrots, chopped

โ€ข 2โ€“3 scallions, chopped (plus extra for topping)

โ€ข 1/2 cup frozen peas

โ€ข 1 small zucchini, chopped into small pieces

โ€ข 2 eggs

โ€ข 1/2 tsp garlic powder

โ€ข Salt and pepper, to taste

โ€ข 2โ€“3 tsp soy sauce

โ€ข Sesame seeds, for topping

Instructions

1. Heat oil and butter in a large pan over medium heat. Add onion, carrots, and scallions. Cook until slightly softened.

2. Add frozen peas and cook 2โ€“3 minutes. Then stir in zucchini, salt, pepper, and garlic powder. Cook until zucchini is tender.

3. Push the veggies to one side of the pan. Crack eggs into the empty space and scramble until just set, then mix with the veggies.

4. Add the leftover rice directly into the pan. Pour soy sauce over the top and stir everything together until heated through.

5. Garnish with extra scallions and sesame seeds. Serve hot!
