Ingredients (Serves 2โ3)
โข 2 cups leftover cooked white rice
โข 1โ2 tsp oil + 1 tsp butter
โข 1 small onion, chopped
โข 1โ2 carrots, chopped
โข 2โ3 scallions, chopped (plus extra for topping)
โข 1/2 cup frozen peas
โข 1 small zucchini, chopped into small pieces
โข 2 eggs
โข 1/2 tsp garlic powder
โข Salt and pepper, to taste
โข 2โ3 tsp soy sauce
โข Sesame seeds, for topping

Instructions
1. Heat oil and butter in a large pan over medium heat. Add onion, carrots, and scallions. Cook until slightly softened.
2. Add frozen peas and cook 2โ3 minutes. Then stir in zucchini, salt, pepper, and garlic powder. Cook until zucchini is tender.
3. Push the veggies to one side of the pan. Crack eggs into the empty space and scramble until just set, then mix with the veggies.
4. Add the leftover rice directly into the pan. Pour soy sauce over the top and stir everything together until heated through.
5. Garnish with extra scallions and sesame seeds. Serve hot!
