Oatmeal Crème Pies 🍪

Wet Ingredients
- 1/2 cup unsalted butter, softened to room temperature (1 stick)
- 3/4 cups dark brown sugar
- 1/3 cup white granulated sugar
- 1 large egg
- 1 tbsp molasses (I used syrup)
- 2 tsp vanilla extract
Dry Ingredients
- 1 1/4 cups all purpose flour
- 3/4 cups old fashioned oats
- 3/4 tsp baking soda
- 2 1/2 tsp cinnamon
Filling
- 1 1/3 cups powdered
- 1/4 cup butter, melted
- 2-3 tbsp heavy cream
- 1 tsp vanilla extract
Directions:
1. Preheat oven to 350F.
2. In a bowl add your softened butter, dark brown sugar, white sugar, and molasses.
3. Cream together with a mixer for 3-4 minutes.
4. Now add your egg and vanilla extract. Mix.
5. Combine flour, oats, baking soda, and cinnamon.
6. Fold into wet ingredients.
7. Line two baking sheets with parchment paper.
8. Scoop with a cookie scoop (about 1 1/2 tbsp).
9. Scoop onto cookie sheet. Make sure they have some space between them because they will spread.
10. Bake at 350F for 11-12 minutes. The middle will appear to be undercooked but that is fine.
11. Take out of oven and let cool for 10 minutes then finish cooling on a cooling rack.
12. This recipe made me 14 cookies, so 7 oatmeal cream pies.
13. Once your cookies are cooled, add your powdered sugar, butter, heavy cream, and vanilla extract in a bowl and mix together until your filling forms.
14. To add your filling, I recommend using a piping bag to fill.
15. Fill a piping bag with the filling and add it to 7 of the cookies. Then place the other respective cookies on top and kinda smash them together.
