No-Bake Vanilla Matcha Protein Bars 🍵
These bars come together with no oven needed, just mix, press, layer, and chill. I eyeball the base until it hits that perfect cookie-dough texture, then top it with a full layer of white chocolate chips for a soft, dessert-like finish.
To deepen the vanilla flavor, I melt the white chocolate and stir in 1 teaspoon of vanilla extract before pouring it over the chips. It adds the prettiest vanilla note and makes these feel extra indulgent ✨
What really elevates these bars is the adaptogenic boost👌🏽
Lion’s mane supports focus, memory, and cognitive clarity, perfect for busy days or afternoon slumps.
Maca root helps with energy, hormone balance, and overall vitality, making these bars both grounding and nourishing.
They’re soft, protein-packed, and aligned with my health and wellness lifestyle, snacks that fuel you and feel good to eat.
🍵 Ingredients
½ cup oat flour
2 scoops vanilla protein powder with matcha
(or 2 scoops matcha protein powder)
2 tbsp maple syrup
2 tbsp coconut oil, melted
¼ cup nut butter of choice
1 tsp maca root
1 tsp lion’s mane
White chocolate chips (Lily’s for refined sugar-free or Enjoy Life for dairy-free)
1 tsp vanilla extract (mixed into melted white chocolate)
If you find them too sweet then just use 1 tbs of maple syrup. You also only need a thin layer of white chocolate I tend to over due it 😅

Making no-bake protein bars at home offers an excellent way to control ingredients while enjoying a delicious treat. These vanilla matcha protein bars stand out because of the unique addition of adaptogens—lion’s mane and maca root—which provide cognitive and energy benefits alongside nutrition. From personal experience, adding these adaptogens not only boosts focus during hectic days but also contributes to a subtle earthy flavor that pairs beautifully with matcha’s natural grassy notes. When preparing these bars, I find that achieving the right cookie-dough consistency for the base is key to a perfect texture. Pressing the mixture firmly into the pan before chilling ensures they hold together well and slice easily. The melted white chocolate mixed with vanilla extract creates a luscious topping that complements the slightly nutty base. For those seeking a refined sugar-free or dairy-free option, using Lily’s or Enjoy Life chocolate chips keeps the bars aligned with clean eating preferences. If you prefer a less sweet snack, reducing maple syrup to one tablespoon and opting for a thinner white chocolate layer balances sweetness and flavor. Nut butters such as almond or cashew work excellently to add creaminess and healthy fats, which help keep you feeling full longer. These bars are ideal as grab-and-go snacks for busy mornings, pre- or post-workout fuel, or afternoon treats to combat slumps. Incorporating them into a wellness routine can support sustained energy and mental clarity, thanks to the synergy between protein, matcha, and adaptogens. Plus, no baking means minimal cleanup and fast preparation—making healthy snacking both accessible and enjoyable.
