No-Bake Vanilla Matcha Protein Bars 🍵
These bars come together with no oven needed, just mix, press, layer, and chill. I eyeball the base until it hits that perfect cookie-dough texture, then top it with a full layer of white chocolate chips for a soft, dessert-like finish.
To deepen the vanilla flavor, I melt the white chocolate and stir in 1 teaspoon of vanilla extract before pouring it over the chips. It adds the prettiest vanilla note and makes these feel extra indulgent ✨

🍵 Ingredients
½ cup oat flour
2 scoops vanilla protein powder with matcha
(or 2 scoops matcha protein powder)
2 tbsp maple syrup
2 tbsp coconut oil, melted
¼ cup nut butter of choice
1 tsp maca root
1 tsp lion’s mane
White chocolate chips (Lily’s for refined sugar-free or Enjoy Life for dairy-free)
1 tsp vanilla extract (mixed into melted white chocolate)
If you find them too sweet then just use 1 tbs of maple syrup. You also only need a thin layer of white chocolate I tend to over due it 😅
