Make pancakes with me

Forget those store-bought mixes; making them from scratch is incredibly satisfying and tastes a million times better. Plus, who can resist those bursts of juicy blueberries? Let's talk ingredients! You probably have most of these in your pantry already. For my go-to blueberry pancake recipe, you'll need: 1 ½ cups all-purpose flour 2 tablespoons granulated sugar 2 teaspoons baking powder ½ teaspoon salt 1 large egg 1 cup milk (any kind works, but whole milk makes them richer!) 2 tablespoons melted butter (plus extra for the pan) 1 cup fresh or frozen blueberries (if using frozen, don't thaw them first!) Now for the fun part: how to make blueberry pancakes! Whisk Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt. This ensures everything is evenly distributed. Combine Wet Ingredients: In a separate medium bowl, lightly beat the egg. Then stir in the milk and melted butter. Mix Wet & Dry: Pour the wet ingredients into the dry ingredients. Mix just until combined. A few lumps are totally fine – overmixing is the enemy of fluffy pancakes! Add Blueberries: Gently fold in the blueberries. If you're using fresh, make sure they're washed and dried. If frozen, add them straight from the freezer to prevent them from bleeding too much into the batter. Heat Your Pan: Heat a lightly buttered griddle or non-stick pan over medium heat. You want it hot enough that a drop of water sizzles, but not smoking. Cook 'Em Up: Pour about ¼ cup of batter per pancake onto the hot pan. Cook for 2-3 minutes per side, or until bubbles appear on the surface and the edges look set. Flip carefully and cook for another 1-2 minutes until golden brown. A few personal tips to get them perfect every time: Don't press down on them with your spatula – that deflates them! And patience is key with the heat; too high and they burn, too low and they're pale. I've definitely had my moments with the heat being too high, resulting in a slightly 'crispier' pancake than intended (haha, like my recent batch!). But hey, even slightly imperfect homemade pancakes are better than no pancakes! While blueberries are my absolute favorite, don't be afraid to experiment!
