Easy Chicken Fried Rice Dinner 🍚🍗

This fried rice came out SO good and is perfect for a quick weeknight dinner! 🤍 I kept it simple with chicken, shrimp, eggs, mixed vegetables, jasmine rice, and soy sauce.

One little secret… I marinated my chicken with a little yellow mustard before seasoning it. 🤭 Don’t worry you won’t taste the mustard at all! It just helps tenderize the chicken and adds a little extra flavor while it cooks.

* the lemon you won’t taste much either !!

Here’s how I made it:

✨ Marinate the chicken with a little mustard and your favorite seasonings, then cook until golden.

✨ Cook the shrimp and set aside.

✨ Scramble the eggs and cook the mixed vegetables.

✨ Add cold jasmine rice to a lightly oiled skillet and let it crisp up a bit.

✨ Toss in the eggs, vegetables, chicken, and shrimp.

✨ Finish with soy sauce, mix everything together, and enjoy!

Simple, flavorful, and the perfect way to use up leftover rice. Save this one for your next dinner! 🥢💛

If you don't have leftover rice, simply cook fresh jasmine rice and spread it out on a baking sheet to cool completely before storing it in the fridge or freezer. This prevents excess moisture from making the rice clump together during cooking. Marinating the chicken in a small amount of yellow mustard along with garlic powder, paprika, onion powder, black pepper, and a splash of lemon juice is a clever technique. Even though the mustard flavor is subtle, its acidity tenderizes the chicken and enhances its taste. To add extra depth, sprinkling some lemon butter garlic seasoning after cooking the chicken can elevate the flavor profile beautifully. Cooking ingredients separately before combining them in the skillet prevents overcooking and ensures that each element retains its individual texture and flavor. For instance, shrimp cooks very quickly, while vegetables like green beans, carrots, corn, and peas benefit from gentle sautéing until tender but still crisp. When it's time to fry the rice, gentle folding and turning are important; avoid stirring too vigorously to prevent mushiness. Letting the rice rest in a lightly oiled skillet for a couple of minutes between turns encourages the formation of small crispy bits that add delightful texture contrast. Finally, finishing the dish with a balanced amount of Kikkoman less-sodium soy sauce brings a savory umami kick without overwhelming the natural flavors of the ingredients. This homemade fried rice recipe is not only quick and easy to prepare but also versatile—feel free to experiment by adding your favorite proteins or vegetables to customize it! This recipe is a fantastic way to use up leftovers and reduce food waste while still enjoying a comforting, flavorful meal. Enjoy your cooking and savor every bite!
