Ingredients (Makes 2 large pizzas or 3 medium)
โข 1 cup (240g) sourdough discard (unfed is fine)

โข 2 tbsp olive oil
โข 1 tsp sugar or honey
โข 1 ยฝ tsp salt
โข 3โ3 ยฝ cups (360โ420g) all-purpose or bread flour

1. Mix warm water, sugar & yeast. Let sit 5โ10 minutes until foamy.
(Skip this step if using instant yeast.)
2. Combine discard, water/yeast mixture, olive oil, salt, and 3 cups flour. Mix until shaggy.
3. Knead 5โ8 minutes until smooth and elastic.
Add a little flour only if very sticky.
4. Cover and let rise 1โ2 hours or until doubled in size.
5. Divide into 2โ3 balls. Rest 20โ30 minutes before stretching.
6. Bake:
