Ingredients:

🔹 For the base:

• 1 cup crushed sugar-free cookies

• 2 tbsp melted coconut oil

🔹 For the filling:

• 1 cup sugar-free Greek yogurt

• 200 g light cream cheese

• 2 eggs

• ¼ cup erythritol or sweetener to taste

• 1 tsp vanilla essence

• Juice of ½ lemon (optional)

• 1 tbsp cornstarch (optional, for firmer texture)

Preparation:

1️⃣ Base: Mix the crushed cookies with the coconut oil and press into a mold. Bake for 8 min at 180°C.

2️⃣ Filling: Beat the cream cheese, add yogurt, eggs, vanilla, sweetener and lemon. Mix well.

3️⃣ Pour over the base and bake at 170°C for 30-35 min or until the center is set.

4️⃣ Let cool and refrigerate 2 hours before serving.

5️⃣ Decorate with red berries or sugar-free jam. Delicious and high in protein!
