Cinnamon Swirl Apple Fritter Loaf

Equipment Needed;

* 9 x 5” loaf pan

* Small bowl; for cinnamon swirl

* Medium bowl; for apple mixture

* Large bowl; for batter mixture

* Small bowl; for maple glaze

Ingredients; Loaf Batter

* 1/2 c. Butter, softened

* 2/3 c. Maple Syrup (can sub honey or granulated sugar)

* 2 eggs

* 1 1/2 tsp. Vanilla Extract

* 1 1/2 c. All Purpose Flour

* 2 tsp. Baking powder

* 1 tsp. Salt

* 1/2 c. Milk

Ingredients; Apple Mixture

* 2 medium apples; chopped

* 2 Tbsp. Granulated Sugar + 1 tsp. Cinnamon

Ingredients; Cinnamon Sugar Swirl

* 1/3 c. Brown Sugar

* 1 tsp. Cinnamon

Ingredients; Maple Glaze

* 1 c. Powdered Sugar

* 1 Tbsp. Maple Syrup

* 1-2 tbsp. Milk

Method;

1. Preheat oven to 350*F. Spray and line a standard 9 x 5” loaf pan with parchment paper. Set aside.

2. In a small bowl, mix together the brown sugar and cinnamon for the cinnamon swirl; Set aside.

3. In a separate medium bowl, toss the chopped apples with the granulated sugar and cinnamon; Set aside.

4. In a large bowl, beat butter and maple syrup together, it’s okay if it’s clumpy. Beat in the eggs, one at a time. Then add the vanilla extract.

5. Whisk together the flour, baking powder, and salt in a separate bowl, then add to the wet mixture. Beat until well combined. Then, add the milk and continue to beat until the batter is smooth.

6. Pour half the batter into the prepared loaf pan, then add half of the chopped apple mixture. Sprinkle half of the brown sugar mixture on top of the apple layer.

7. Pour the rest of the batter over the apple layer, top with remaining apples and then sprinkle with remaining cinnamon/brown sugar mixture.

8. Lightly press apples into the batter and gently swirl the brown sugar through it using a knife.

9. Bake at 350*F for 50-60 minutes, or until a toothpick inserted into the middle comes out clean and the top is golden brown. Let the loaf rest in the pan for 15 minutes, then remove and transfer to a cooling rack to cool completely.

10. Whisk the ingredients for the maple glaze together in a small bowl (glaze is optional)!

11. Once the loaf is completely cool, drizzle with glaze.

12. Serve warm with butter if desired. Enjoy!

📒Notes:

~ If you don’t have powdered sugar you can make your own by only using granulated sugar and cornstarch! In a blender or food processor, add in 1 cup of sugar and 1 tbsp. of cornstarch. Blend until it has a similar consistency to powdered sugar. This may take several minutes depending on the power of your blender. (Google: how to make powdered sugar)
