Chicken and Sausage Jambalaya – a Mardi Gras staple! Easy to make and tastes great! Chicken, smoked sausage, diced tomatoes, tomato sauce, chicken broth, rice, dried minced onion flakes, dried parsley, beef bouillon, dried thyme, garlic powder, cayenne pepper, salt, and black pepper. This is THE BEST! Can add fresh onion, celery, bell peppers and shrimp. Ready to eat in about 30 minutes!

Ingredients:
½ lb smoked sausage cut into 1/4-inch slices
1 lb boneless chicken breast or tenderloins
1 Tbsp oil
2½ cups low-sodium chicken broth or water
1 (14-oz) can diced tomatoes undrained
1 (8-oz) can tomato sauce
1 cup long-grain rice
3 Tbsp dried minced onion
1 Tbsp dried parsley flakes
1 Tbsp beef bouillon granules
½ tsp dried thyme leaves
½ tsp garlic powder
¼ tsp cayenne pepper, or to taste
salt and black pepper, to taste
Instructions:
In a Dutch oven, heat oil and add chicken and smoked sausage. Cook over medium-high heat until the chicken is no longer pink.
Add remaining ingredients. Bring mixture to a boil over medium-high.
Cover, reduce heat and let simmer for 20-25 minutes, until the rice is tender.
