Snickerdoodle Cheesecake Bar Recipe.😋

Yesterday was my 5th anniversary, and of course you know we needed a dessert.💗 Definitely a must try!🔥

Plus it’s fall, I want alllll the cinnamon goodies.😋🍂

YOU NEED:

CHEESECAKE:

16 oz cream cheese, room temp

1 c powdered sugar

2 large eggs, room temp

1 teaspoon vanilla extract

CINNAMON SUGAR:

1/3 C sugar

1 tsp cinnamon

CRUST:

2 1/2 C all-purpose flour

1 tsp cinnamon

1/2 tsp baking soda

1 1/2 C sugar

1 C salted butter, room temp

1 tsp vanilla extract

2 large eggs, room temp

RECIPE:

1. Preheat the oven to 350°F. Spray a 9×13 glass pan with nonstick spray.

2. In a medium mixing bowl, cream together the cream cheese, powdered sugar, eggs, and vanilla until smooth. Set it to the side.

3. In another small bowl, mix together your cinnamon sugar and sit to the side.

4. In a large bowl, cream together the butter and sugar until fluffy. Add the vanilla and the eggs, one at a time. Mix until combined.

5. Add in flour, cinnamon and baking soda. Mix JUST until combined. Don’t over mix it!

6. Press 2/3 of the dough into an even layer onto the bottom of the prepared baking dish. *I wet my hands to press the dough out, it is sticky.

7. Sprinkle 1/2 of the cinnamon sugar evenly over the dough. Then spread the cheesecake mixture over the dough.

8. Drop pieces of the remaining cookie dough randomly over the cheesecake layer. Then sprinkle the rest cinnamon sugar over the top.

9. Bake for 45 minutes or until the edges are lightly golden and the center has set.

10. Allow the Snickerdoodle cheesecake bars to cool completely on the counter before cutting.

Enjoy!

... Read moreHey dessert lovers! I wanted to chat a bit more about why these Snickerdoodle Cheesecake Bars are an absolute game-changer, especially if you're like me and always looking for that perfect balance of deliciousness and ease. First off, for those of you searching for 'quick desserts with cream cheese' or 'easy dessert bars for a crowd,' you've hit the jackpot. Seriously, traditional cheesecakes can be a bit intimidating with water baths and long cooling times. While I adore a good San Sebastian cheesecake with its unique burnt top, sometimes you just need something straightforward that still delivers that luxurious cream cheese flavor without the fuss. These bars are it! No fancy equipment, just pure creamy, cinnamony goodness. They bake up beautifully in a 'glass baking dish' and slice perfectly, making them ideal for sharing at any gathering – from a casual fall get-together to a special anniversary celebration. Just remember to use 'nonstick spray' for an easy release! Let's talk about that incredible flavor. If you're into 'flavoured sugar cookies' or even 'cheesecake stuffed snickerdoodle cookies,' these bars combine the best of both worlds. You get the classic warmth of snickerdoodle with its distinct cinnamon-sugar crunch, perfectly complementing the smooth, rich cheesecake layer. That generous sprinkle of 'cinnamon sugar' on top and mixed into the crust truly makes all the difference. The 'layered texture' is just divine – a soft, chewy snickerdoodle crust, a velvety cheesecake center made with 'powdered sugar', and more cookie dough pieces dotted on top. The way the 'creamed butter and sugar' in the crust creates that perfect, comforting base is absolutely key to its appeal. And don't forget the convenience! Using 'room temp' cream cheese and eggs for the cheesecake mixture makes all the mixing so much smoother and ensures a lump-free filling. The recipe itself is designed for simplicity, meaning you don't need to be a seasoned baker to get fantastic results. You'll see them emerge from the oven 'golden brown' and smelling absolutely heavenly. The aroma of cinnamon filling your kitchen is just another bonus! The hardest part, I swear, is allowing them to cool completely on the counter before cutting into those perfect squares. That patience is rewarded with bars that hold their shape and deliver maximum flavor. So, whether you're craving that comforting 'snickerdoodle' taste, need an 'easy dessert bar for a crowd' for your next potluck, or just want a 'quick dessert with cream cheese' that looks impressive but is secretly simple to make, these Snickerdoodle Cheesecake Bars are your delicious answer. They're definitely a new favorite in my recipe collection, and I love seeing them presented beautifully on a 'black and white striped plate' alongside a warm beverage. Give them a try – you won't regret it!
