🍗 Baked Chicken Leg Quarters & Rice One-Pan Style

🛒 Ingredients

• 4 bone-in chicken leg quarters, thighs or drumsticks (or boneless if preferred)

• 1 cup long-grain white rice (uncooked) I used Jasmine rice

• 2 cups chicken broth (or water + bouillon cube)

• 1 tbsp olive oil or melted butter

• 1 tsp garlic powder

• 1 tsp onion powder

• 1 tsp paprika

• ½ tsp black pepper

• ½ tsp salt (adjust to taste)

• Optional: ½ tsp Cajun seasoning or all-purpose chicken seasoning for extra flavor

• Optional veggies: 1 cup frozen peas, carrots, or mixed vegetables (stir in halfway through baking)

🔥 Directions

1. Preheat oven to 375°F (190°C).

2. Rinse your rice and spread it evenly in a lightly greased 9x13-inch baking dish.

3. Pour in the broth and stir in half of your seasonings.

4. Pat chicken dry and rub with olive oil or butter, then sprinkle remaining seasonings all over.

5. Place chicken on top of the rice mixture.

6. Cover tightly with foil and bake for 50 minutes.

7. Uncover, add optional veggies if using, and bake another 20 minutes (until chicken is golden and internal temp hits 165°F).

8. Let rest 5 minutes before serving—rice will finish steaming and be perfect.
