German Chocolate Pound Cake with Coconut and Pecan

Ingredients

For the Cake:

¾ cup (180ml) buttermilk

4 oz (115g) German sweet chocolate, melted

1 teaspoon vanilla extract

1 cup shredded coconut

1 cup chopped pecans

1 cup (225g) unsalted butter, softened

2 cups (400g) granulated sugar

4 large eggs

2 ½ cups (315g) all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

For the Caramel-Chocolate Icing:

1 teaspoon vanilla extract

½ cup (90g) chopped pecans

4 oz (115g) German sweet chocolate, melted

½ cup (115g) unsalted butter

1 cup (200g) brown sugar

½ cup (120ml) heavy cream

Instructions

1. Make the Cake Batter:

Preheat oven to 325°F (165°C) and grease a bundt pan.

In a large bowl, beat butter and sugar until fluffy.

Add eggs, one at a time, mixing well.

In another bowl, whisk together flour, baking powder, and salt.

Gradually add dry ingredients to the butter mixture, alternating with buttermilk.

Stir in melted German chocolate and vanilla extract.

Fold in coconut and pecans.

2. Bake the Cake:

Pour batter into the prepared bundt pan and smooth the top.

Bake for 60–70 minutes, or until a toothpick comes out clean.

Cool in the pan for 10 minutes, then transfer to a wire rack.

3. Make the Caramel-Chocolate Icing:

In a saucepan, melt butter over medium heat.

Stir in brown sugar and heavy cream, then bring to a simmer for 3–4 minutes until thickened.

Remove from heat and stir in vanilla, melted chocolate, and pecans.

4. Assemble the Cake:

Drizzle warm caramel-chocolate icing over the cooled cake.

Garnish with extra pecans and shredded coconut.

Let set for 30 minutes before slicing.
