Oatmeal cookies

Ingredients:

- 2 sticks unsalted butter, softened

- 1 cup light brown sugar, firmly packed

- 2 large eggs

- 1/2 cup granulated sugar

- 1 1/2 teaspoons vanilla extract

- 1 1/2 cups all-purpose flour

- 1 teaspoon baking soda

- 3/4 teaspoon table salt

- 1 tablespoon ground cinnamon

- 2 1/2 cups oats

Instructions:

1. Add the butter to a large bowl.

2. Add the sugars and beat until light and fluffy.

3. Add the eggs and beat until combined.

4. Stir in the vanilla extract.

5. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and oats.

6. Gradually add the flour mixture to the butter mixture until completely combined. Be sure to scrape the sides and bottom of the bowl to ensure the ingredients are well-mixed.

7. Preheat the oven to 375°F (190°C) and line two cookie sheets with parchment paper.

8. Using a cookie scoop, place the cookie dough onto the prepared cookie sheets, leaving plenty of space between each cookie.

9. Bake in the preheated oven for 10-12 minutes. The edges should be slightly browned, and the centers may still be slightly underbaked, but they should not be raw. They will continue to bake as they cool.

10. Allow the cookies to cool completely on the cookie sheets before serving and enjoying.
