Lemon Blueberry Cake Recipe 🍋🫐

Cake Ingredients:
🫐 1/2 cup unsalted butter (room temp)
🫐250 g sugar
🫐100 g light brown sugar
🫐6 tablespoons vegetable oil
🍋4 large eggs at room temp
🫐1 tablespoon vanilla extract
🍋 375 grams all-purpose flour
🫐2 teaspoons baking powder
🍋1/2 teaspoon baking soda
🫐1/2 teaspoon salt
🍋3/4 cup buttermilk (room temp)
🫐 2 tablespoons lemon zest
🍋 1/2 cup of lemon juice (3-4 lemons)
🫐 1 tablespoon all-purpose flour
Frosting Ingredients:
🍋 8 ounces full fat cream cheese (room temp)
🫐 1/2 cup unsalted butter (room temp)
🍋 420 g powdered sugar
🫐 1 tablespoon heavy cream
🍋 1 teaspoon vanilla extract
🫐 pinch of salt
For the frosting, you’ll use a stand mixer with paddle attachment and beat the cream cheese and butter together on medium until they’re no more lumps (3 minutes).
Add powdered sugar, heavy cream, vanilla, and salt on very low speed. When all in, turn mixer on high and beat for 3 minutes.
This frosting isn’t suitable, nor is enough, for piping decorations on it, but there’s beauty in simplicity! Decorate with lemon and blueberries.
