High Protein Creamy Tuscan Salmon

👍: I’ve tried other recipes omitting the tomato elements and found it to be quite jelak. This recipe cuts the grease and substitutes high-fat cream with soft cream cheese, reducing the fat content. I used cherry tomatoes instead of sun-dried tomatoes as they are more accessible. Recipe tweaked from Chef Jack Oven.

Recipe (for 2pax):

~SALMON~

200g of salmon, skin-on

dash of garlic powder

dash of onion powder

dash of sweet paprika powder

~SAUCE~

1 tbsp of olive oil, to oil the pan

1 white onion

2 garlic cloves

1 tsp tomato paste

10 cherry tomatoes

60ml water (or any stock if avail)

70g soft cream cheese (i used light Philadelphia)

150g baby spinach

salt and pepper to taste

~RICE~

1 cup rice

1 cup water

Steps:

1. Cook rice for 2pax according to your rice cooker instructions.

2. Coat and massage salmon with garlic, onion and sweet paprika powder.

3. Oil the pan, fry salmon on medium heat till half cooked through. Set aside.

4. Using the same pan, fry onion and garlic till softened.

5. Add in tomato paste and cherry tomatoes, fry and pour in water/stock to deglaze.

6. Add in cream cheese and mix till sauce turns into orange colour. Add in spinach and mix till wilted.

7. Add salmon back to pan and cover the pan till salmon is cooked through. Season with salt and pepper to taste.

8. Serve with rice and enjoy! 🍛
