Fried Chicken Chili

Had some fried chicken from a gathering that we were tired of after eating leftovers for two nights, so I took what was left and made a Fried Chicken Chili.

With chorizo, white beans, corn, and diced tomatoes

(please don't mind the mess in the background of my kitchen. I was in the middle of 10 things when I recorded this)

I’ve found that combining fried chicken with savory ingredients like chorizo and white beans adds a rich, smoky depth to the chili that’s unforgettable. Adding corn and diced tomatoes brings sweetness and acidity that balance the dish beautifully. When making Fried Chicken Chili, I usually start by sautéing the chorizo to release its spices and oils, then adding the beans and tomatoes to create a hearty base. Shredding leftover fried chicken pieces and stirring them in toward the end helps retain their crispy flavor without making them soggy. This recipe is perfect for busy weeknights when you want something warm and comforting but don’t have time to start from scratch. Plus, it’s a crowd-pleaser with its unique blend of textures and flavors. I like to serve it with a dollop of sour cream and some shredded cheese, but it’s also delicious on its own or with a side of cornbread. One tip I’ve learned is to control the spice level by adjusting the amount of chorizo and adding chili powder or hot sauce if desired. This flexibility allows you to customize the dish to your taste or that of your guests. Overall, Fried Chicken Chili is a creative and tasty way to breathe new life into leftovers and enjoy a satisfying meal that feels both familiar and exciting.
