What state makes the best burritos? I have to say California! I grew up in San Diego and the Midwest. I was born in the Midwest, and while I was still an infant, my mom moved us to San Diego, CA, for the first time. I said the first time because we went back and forth from the CA to the mid during my life. Growing up in SD, I was blessed to enjoy some of the best tacos, rolled tacos, and fire burritos like this California burrito. After doing some research, I found that it sounds like this CA burrito was created in SD during the 80s. I dont know how true this is, but if you have never tried this burrito, you are missing out. I used Lion’s Mane mushroom to replace the steak. The burrito also has seasoned fries, pico de gallo, vegan cheese guacamole, and macadamia sour cream will also be found.

Having spent a good part of my life bouncing between California and the Midwest, I can confidently say that San Diego's culinary scene, especially its burritos, left an unforgettable mark on me. The CALIFORNIA BURRITO isn't just a meal; it's a cultural icon, and understanding its roots makes enjoying it even better. So, what exactly makes a CALIFORNIA BURRITO so legendary, and where did it truly begin? While many claim its birth in the 1980s in San Diego, the exact origin story can be a fun debate among locals. The most widely accepted theory credits Roberto's Taco Shop or a similar establishment in San Diego with adding French fries to a traditional carne asada burrito. This ingenious addition created a hearty, satisfying, and uniquely Californian meal that quickly became a staple. Imagine, juicy carne asada, crispy French fries, fresh pico de gallo, cheese, and guacamole, all wrapped snugly in a warm tortilla – it’s a symphony of textures and flavors. It's truly a San Diego style burrito through and through. For those of us embracing a plant-based lifestyle, recreating this classic has been a delicious journey. The beauty of the CALIFORNIA BURRITO is its versatility. My version swaps out the traditional carne asada for succulent Lion's Mane mushroom, which, when properly seasoned, offers a fantastic meaty texture that even non-vegans appreciate. But the fun doesn't stop there. The seasoned fries are crucial – think golden, crispy goodness. Then, we layer in homemade pico de gallo for a burst of freshness, melty vegan cheese, and luscious guacamole. And for that creamy, tangy finish? My macadamia sour cream is a game-changer. It’s all about capturing those authentic flavors and textures using ingredients that are kind to our planet and our bodies. If you've never tried a vegan California burrito, you're truly missing out on a culinary adventure that's both satisfying and surprisingly easy to make at home.
