Egyptian goulash is a beloved Middle Eastern dish that highlights the wonderful texture contrast between its crunchy phyllo layers and tender, savory meat filling. Traditionally prepared with layers of buttery phyllo pastry, this dish transforms simple ground beef by infusing it with aromatic spices such as allspice, cinnamon, garlic powder, and freshly ground black pepper. These spices are key to delivering the warm, rich flavor profile that makes this pie stand out. The technique of layering phyllo dough with generous brushing of melted butter and olive oil creates a flaky, golden crust that crisps beautifully in the oven. Using about twelve layers on both the bottom and the top ensures a sturdy yet tender shell that encloses the juicy meat filling perfectly. Thawing phyllo dough slowly in the fridge prior to assembling helps prevent cracking and makes it easier to handle. Cooking the onions until golden before adding the ground beef allows the onions to develop sweetness and depth, balancing the spices and beef's richness. Once spiced and cooked, letting the filling cool slightly helps maintain the dough's crispness when assembled. Adding a simple egg and milk wash before baking gives the top crust a glossy, appetizing finish. Baking at 360°F (180°C) for about 50 minutes will produce a deeply golden and crispy pie that’s satisfying both in texture and flavor. Egyptian goulash is incredibly versatile—try adding finely chopped fresh herbs like parsley for extra freshness in the filling, or experiment with different spice combinations to adapt the recipe to your tastes. It’s a perfect dish to prepare ahead for family dinners or as a shareable treat at gatherings. Overall, this meat pie brings together the best of Middle Eastern home cooking with accessible ingredients and straightforward preparation, making it a wonderful addition to any recipe collection.
