✶ Pumpkin Chocolate Marble Cake/Loaf✶

Combination of pumpkin with chocolate is like a match in the heaven. So bright, decadent and full of chocolate and pumpkin flavors.

🔘Ingredients:

1 1/3cups (186g) flour

1 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

4 tbsp (62g) unsalted butter (room temp)

3 tbsp(45ml) oil

1/3 cup (67g) granulated sugar

1/3 cup (67g) brown sugar

2 large eggs (room temp)

1 tsp vanilla extract

1/2 cup sour cream or Greek yogurt(room temp)

1 cup (275g) pumpkin pure

1/2 tbsp pumpkin pie spice

1/4 cup cocoa powder

1/3 cup hot water

1/4 cup semi sweet chocolate chips

1/2 tsp cinnamon

1/2 tbsp instant coffee

🔘Prep and Baking Process:

Pre-heat oven to 355ºF .

Butter the sides of cake pan and set aside.

Add flour, baking powder, baking soda, cinnamon, pumpkin pie spice and salt into a sifter and set aside.

Beat eggs with brown sugar for about 3 minutes and add granulated sugar. Beat all together until creamy and foamy.

Add oil, butter, sour cream and vanilla extract, mix until well combined.

Add pumpkin puree and mix well.

Then, add the flour mixture and mix until incorporated (don’t over-mix the cake batter).

In the small bowl combine cocoa, instant coffee and hot water, mix until it will become thicker texture.

Add some of chocolate chips and fold together.

Divide the batter in half and add cocoa mixture into one of the halves.

Fold it gently to create chocolate batter.

Add the rest of chocolate chips into the batter.

Alternate adding the batters into the cake pan to create layers.

Scoop them into the loaf pan like on the video.

Bake the chocolate pumpkin cake/loaf in the preheated oven for 60-80 minutes, or until a toothpick inserted into the center comes out clean with a few crumbs attached.

Check the loaf at 60 minutes.

If the top will be browning fast, cover the top with aluminum foil and continue baking.

Let the cake/loaf rest for 10 min in the pan and after transfer to cooling rack to cool completely.
