✶ Baku Kurabie (Shortbread Cookies)✶
These cookies are from my childhood: flower shaped, buttery, crispy, filled with jam in the middle and they melt in the mouth.
🔘Ingredients:
160g (2/3 cups) butter (room temp)
80g (2/3 cups) powdered sugar
1 egg( room temp)
230g (1 3/4 cups) all purpose flour
2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
60-80g (1/4 cup to 1/3 cups) strawberry jam
🔘Prep and Baking Process:
Preheat oven to 375F/ 190C
Line the baking trays with silicon mat and set aside.
Cream the butter for 5 min until it becomes light and fluffy.
Add powdered sugar and continue to cream for another 3 min ( it will increase in size)
Add egg and vanilla extract, mix until all incorporated.
Add flour in batches and fold everything together.
Add salt and baking powder, fold gently all together (do not over mix the dough)
Transfer the cookie dough into a piping bag with open star nozzle (6B) and start piping the flowers roughly 1inch apart onto a baking mat.
With slightly wet index finger make a hole in the center of each cookie.
Pipe jam in the center of each cookie ( you can use any jam of your choice).
Bake cookies for 10-12 min or until the edges will be
Let the cookies to cool for 5 min in the tray and after transfer to a cooling rack to cool completely.
